Cover Letter - Response to Information Request
Please refer to the attached Cover Letter Response and Civil Engineering Plans prepared by Recor
addressing items 10-15.
Issue – Kitchen Layout
The attached kitchen fit out document may provide greater information as to what standard
and extent of facilities are required for a food premises. It is recommended this is reviewed to
ensure the development permit will not raise conflict with food licencing requirements at the
point in time that licencing is sought.
Further information is required for food business fit out.
Information Required
17. Location of sinks, e.g. mop sink, hand wash basin, etc.
18. Information on how cooking/smoking fumes will be removed and distributed to the
surrounding environment.
Response
The proposed plans illustrate the extent of the kitchen, dish bay, back of house and servery areas,
which provide a generous space for the future use. The specific details relating to the location of
sinks, e.g. mop sink, hand wash basin and cooking processes can be provided with any food health
application.
Issue – Waste Collection
Provide greater information in regard to what waste is being generated from the site (total site
removal). Therefore, what sized bin services are required/frequency of bin services.
Information Required
19. Identify total site removal, this will inform the appropriate bin sizes, storage area, frequency
of servicing arrangement.
20. How the vehicle and enter and leave the site in a forward motion.
Response
A large, screened bin enclosure has been accommodated for the use as shown on the architectural
plans. It is envisaged that the use can be appropriately serviced by four (4) wheelie bins (2 general
waste and 2 recycling) that will be collected via the Reserve Street. Sufficient space is
accommodated on the roadside in front of the street tree planting so as to not obstruct the car
parks. General waste is collected each Wednesday, which is sufficient for the use.
There is also an existing loading bay located on the site that was approved the original development
of the shops. However, this is not currently used for waste collection, as it is more efficient for the
waste collection to occur via the street.
