Response to Information Request Concerning Commercial Cooking Odours

  Issue:

Proximity of commercial kitchen to residential premises with resulting impact from
cooking odours from food preparation areas, kitchen exhausts and outdoor dining areas. AMMAN

                                                                                                    BRISBANE
  Response:
                                                                                                 GOLD COAST
  Minimum Requirements KUALA LUMPUR

                                                                                                     LONDON
The BCA references AS1668.2 in regard to the deemed-to-satisfy requirements for
                                                                                                  MELBOURNE
cooking exhausts. AS1668.2 addresses the external odour issue by including
requirements for velocity and height of the discharge.

Those minimum requirements are summarised as follows for exhaust rates exceeding
  1,000 I/s.
      • Hood to incorporate grease arresting filters to impede the flow of grease within
the air stream. No specific performance is nominated.
       • Discharge vertically with a discharge velocity not less than 5m/s.
       • Discharge located at not less than 6m from a property boundary.

  Proposed Treatment of Cooking Exhausts

AS1668.2 also recognises the use of special filtration processes to remove contaminants
and in such cases, the conditions for discharge may be reduced. Refer Clause 5.10.3 of
  AS1668.2.

For this project, it is proposed that each kitchen exhaust will be provided with an
  electrostatic precipitation filtration device.

The electrostatic precipitator removes particles (grease, water vapour, carbon and the
like) down to 0.1 micron in size. These particles are in part responsible for carrying over
  cooking odours.
